3 minute crackers – gf, vegan

I know I have been absent a lot lately, I have just been soaking up life. Its good times and its crappy times.

Miss 2 is at that stage where everything she does is hilarious and cute, and I just want to enjoy it. Having said that, the last few months have also been very trying as my older two are now pre-teen, and we have entered the attitude era. Any energy I have left at the end of the day is spent hauling my butt into bed and staring blankly at a screen of some sort. Sad, I know.

Cooking makes me happy though. So I’ve been cooking heaps of different things lately, and so many things I want to share with you over the coming weeks!

I love crackers. I could eat an entire packet of them in a sitting, which is the reason why I have always wanted to make my own. It just seemed like I was taking things to a whole new level though. Making my own crackers? Really? Now that I have made them once though, I have realised how quick and easy they are. Well worth making a few batches at a time so that you have them on hand when you want something tasty and crunchy :) Continue reading

So, what’s wrong with cotton wool?

I had one of those moments on the weekend that challenged me as a mother. My 11 year old son was invited over to a good friend’s house for his birthday. He wasn’t having a ‘party’ as such, he just wanted to ‘hang out’ with his mates. Fair enough. We shuffled around a few things so that my boy could go along. I have met the mother several times at school and she seemed nice enough, I had no reason to think that my boy was in any danger or anything. Continue reading

It’s zucchini season! Lunch boxes and more…

It has been a busy week here, with kids starting a new year at school. It hasn’t taken long to get back into the old routine of menu planning and lunch box prepping.

I feel like this year will be different though.  I am allowing myself a little bit of time just for me. The family schedule is filling up fast, but I am making sure that in there, there is some time for me to get back a little bit of sanity, to exercise a little bit and just take some deep breaths.

I have set myself a challenge, to exercise every day in February for 30 minutes. It may be a walk, or weights or pilates or a run . So far, so good. Ok, so it’s only day 1, but whatever, as far as I’m concerned, I’m 100% on target! I’ll keep you posted how I am going!
