Chocolate pumpkin brownies and this week’s meal plan

Pumpkin is a vegetable that my kids and husband are a bit resistant to. They only tolerate it in very small quantities (if at all), so I am always looking for ways to integrate (read:hide) it in different things I cook.  There’s only so many vegful meatballs they’ll eat, so this week I turned to chocolate to help me out 🙂

Today, I am sharing a chocolate brownie recipe, which is loaded with pumpkin and the kids gobbled it up! It’s low in fat too (if you’re worried about that type of thing 😉 ).

Leftover oatmeal muffins and life’s little detours

Thanks to the chilly Melbourne weather, we have been enjoying hot porridge (oatmeal) in the mornings for breakfast. Unfortunately, more often than not, we have leftovers, and until tonight, my chickens have been enjoying eating organic rolled oats, cooked in organic milk. Initially it didn’t bother me too much, but day after day, it felt far too wasteful.

So tonight, I decided to try making muffins using the leftovers, and it worked beautifully! I’ll pop the recipe below.

It’s zucchini season! Lunch boxes and more…

It has been a busy week here, with kids starting a new year at school. It hasn’t taken long to get back into the old routine of menu planning and lunch box prepping.

I feel like this year will be different though.  I am allowing myself a little bit of time just for me. The family schedule is filling up fast, but I am making sure that in there, there is some time for me to get back a little bit of sanity, to exercise a little bit and just take some deep breaths.

I have set myself a challenge, to exercise every day in February for 30 minutes. It may be a walk, or weights or pilates or a run . So far, so good. Ok, so it’s only day 1, but whatever, as far as I’m concerned, I’m 100% on target! I’ll keep you posted how I am going!

gluten free honey banana muffins and make your own paper cases

It’s Sunday night, I look in the cupboard, I look in the fridge. Bleh. School lunch time again. I bought some bananas yesterday, that ended up under some heavy stuff – so now I have squashed bananas in my fruit bowl. Kids are turning up their noses at them, so I think the obvious. Banana muffins. I set to work pulling out ingredients then realized that I didn’t have any paper cases to put the batter in. No big deal, I could have greased and floured the tray, but that seemed like too much effort, and I thought this would be a great opportunity to show you how to make your own when you too, have run out.
