It’s been a fairly busy weekend, with lots of late nights, and drop-ins for lunches and dinner. So tonight, when I asked my kids what they wanted in their lunch boxes tomorrow, and they replied with cheese sandwiches, who was I to complain? The only problem is that I couldn’t blog about a cheese sandwich now, could I? So, I started to think about what snacks were going into the lunch boxes this week, and decided I would make a gluten free brownie using tinned beans. This way they were filling and full of protein. Combined with a cheese sandwich and some fruit and vegetables, I think we have a pretty balanced lunch box.

Most of the schools in Victoria go back today, which means, back to making school lunches, back to early mornings, back to extra curricular activities. I always feel like school going back creeps up on me, and all of a sudden I’m thinking of what to pack into lunches again. I will be doing some gluten free options in the coming school lunch posts, but this week, I’m doing quick and easy, child pleasing stuff.

Two weeks ago on my facebook page, I promised a grain free (and therefore gluten free), dairy free, nut free and refined sugar free biscuit. Then I hurt my back, and was so low on supplies, I couldn’t even play with the recipe. Today, I finally got to my dry goods supply store, so tonight, while Master B cooked the BBQ, I whipped up the biscuits and am now procrastinating cleaning my kitchen while I type up the recipe for you all. If you read my post yesterday you will know that last night I had a night out with my sister. We went to the movies to see Gatsby. It was a fantastic movie, I adore Leonardo Dicaprio, and he certainly didn’t disappoint, either did spider man (what’s that actor’s name again?). Although it was great to get out of the house for a bit, and not worry about organising a baby sitter, it was a late night and I just didn’t have the time or energy to make lunches last night, or to do the proper pre bed pick up.
