Pumpkin is a vegetable that my kids and husband are a bit resistant to. They only tolerate it in very small quantities (if at all), so I am always looking for ways to integrate (read:hide) it in different things I cook. There’s only so many vegful meatballs they’ll eat, so this week I turned to chocolate to help me out 🙂
Today, I am sharing a chocolate brownie recipe, which is loaded with pumpkin and the kids gobbled it up! It’s low in fat too (if you’re worried about that type of thing 😉 ).
I know I have been absent a lot lately, I have just been soaking up life. Its good times and its crappy times.
Miss 2 is at that stage where everything she does is hilarious and cute, and I just want to enjoy it. Having said that, the last few months have also been very trying as my older two are now pre-teen, and we have entered the attitude era. Any energy I have left at the end of the day is spent hauling my butt into bed and staring blankly at a screen of some sort. Sad, I know.
Cooking makes me happy though. So I’ve been cooking heaps of different things lately, and so many things I want to share with you over the coming weeks!
I love crackers. I could eat an entire packet of them in a sitting, which is the reason why I have always wanted to make my own. It just seemed like I was taking things to a whole new level though. Making my own crackers? Really? Now that I have made them once though, I have realised how quick and easy they are. Well worth making a few batches at a time so that you have them on hand when you want something tasty and crunchy 🙂 Continue reading
It has been a busy week here, with kids starting a new year at school. It hasn’t taken long to get back into the old routine of menu planning and lunch box prepping.
I feel like this year will be different though. I am allowing myself a little bit of time just for me. The family schedule is filling up fast, but I am making sure that in there, there is some time for me to get back a little bit of sanity, to exercise a little bit and just take some deep breaths.
I have set myself a challenge, to exercise every day in February for 30 minutes. It may be a walk, or weights or pilates
or a run . So far, so good. Ok, so it’s only day 1, but whatever, as far as I’m concerned, I’m 100% on target! I’ll keep you posted how I am going!
And now onto cake… 😉

I should have called this blog, “the lazy cook”, because I like to cook, using one bowl, one utensil, I want it to take 5 minutes, and taste amazing- like, really amazing.
Tonight, as I packed school lunches, looked in the pantry to see the cookie jar empty, and the cake container holding only a few crumbs, I knew I needed to whip something up.
As we settle into some warmer weather here in Melbourne, Australia, the kids are starting to spend extra time outside, so after dinner, when they were outside on the trampoline and playing basketball, I thought I would whip up some cookies.
I’ll warn you, these are a little bit ugly, and not overly sweet (although, they are sweet enough for us 🙂 ), so if you prefer, increase the sugar slightly, or add extra choc chips.

I know it’s been ages since I’ve blogged. Mainly because nothing particularly exciting has been happening, and partly because I was feeling exceptionally lazy. It’s a gift I have of avoiding everything I should be doing, and doing a whole lot of everything else!
