Things have been hectic around here. Miss O who has been waking a lot lately, has been sleeping through again. However, I’ve had my other kids sick, so they have all been waking up instead. Isn’t that always the way? Throw into the mix, my sister and I have been busy recipe testing for our little business, and a school production for two nights in a row. So this week is a bit of a write off, hopefully next week will be a much more chilled out week!
I’m sitting here watching Please Marry My Boy. It’s hilarious! So if I wander off on a tangent, sorry, I love trashy tv! After a long day with Miss E home sick, a visit to the doctor (waiting for aaaages), eating a terrible lunch of corn chips and coffee left me feeling a bit flat and unenergenic (jeez, no wonder!!) I decided I needed a quick, easy crowd pleaser from ingredients that I had on hand. Enter stage left, Beef Kofta, served with tzitzki, rocket salad and pita bread.
You know when you have left dinner to the last minute, everyone is hungry, and you’re wondering what to put together for a meal? My fall back meal is wraps. I always have pita bread in the freezer, and will cut a heap of salad veg up, grate some cheese, pull out some deli meats, or leftover meat from a previous dinner, grate some cheese or open a tin of tuna – you get the idea. When we decided to try gluten free for hubby, I started struggling, as I realized just how often I was making it. I think probably once a week I made wraps of some form. I have looked at buying gluten free wraps, but the ingredient list was a little bit long for my liking, and I didn’t want to eat numbers just because we weren’t eating gluten. Continue reading
So I’m cheating a little bit, because I really cooked this last night. I saved the chicken leftovers for tonight because I have a busy day ahead of me, and basketball for Master B, so leftovers made more sense for tonight’s dinner. But last night’s dinner was a really simple, nutritious dinner and the kids liked it. Three boxes ticked! Simple, nutritious, and kid approved 🙂 Oh, and a little bonus – it was a cheap meal!
