San Choy Bow
It was all very exciting here yesterday as this recipe was featured on the baby hints and tips website. But for those who don’t follow us on facebook, I thought I’d post this recipe today, as it is a great family recipe. It’s a crowd pleaser, while being friendly to the budget.
Serves 15 generous servings
I love beef mince. It is such a versatile ‘cut’ of meat. It is cheap, and defrosts quickly when you have left meal preparations to the last minute. I have lots of mince recipes that I will be sharing with you over the coming posts, and the one I am starting with is San Choy Bow.
When I first made this, I wasn’t sure my kids would eat it. It is loaded with vegetables, and sweet Asian sauces, which my kids don’t normally go for. But surprisingly, every time I have made this, they all declare it as their favourite meal ever!
You know when you have left dinner to the last minute, everyone is hungry, and you’re wondering what to put together for a meal? My fall back meal is wraps. I always have pita bread in the freezer, and will cut a heap of salad veg up, grate some cheese, pull out some deli meats, or leftover meat from a previous dinner, grate some cheese or open a tin of tuna – you get the idea. When we decided to try gluten free for hubby, I started struggling, as I realized just how often I was making it. I think probably once a week I made wraps of some form. I have looked at buying gluten free wraps, but the ingredient list was a little bit long for my liking, and I didn’t want to eat numbers just because we weren’t eating gluten. Continue reading
So I’m cheating a little bit, because I really cooked this last night. I saved the chicken leftovers for tonight because I have a busy day ahead of me, and basketball for Master B, so leftovers made more sense for tonight’s dinner. But last night’s dinner was a really simple, nutritious dinner and the kids liked it. Three boxes ticked! Simple, nutritious, and kid approved 🙂 Oh, and a little bonus – it was a cheap meal!

It’s day 4 of school holidays, and my back is just starting to come good now. I had promised my kids that I’d take them to see a couple of the new movies that have come out, so today we went off to see Despicable Me 2. It was a great movie, all three of my kids (aged 6, 9, 10) enjoyed it, and Miss O managed to stay most of the time in her seat 🙂

Things have been quiet on the blog this week, thanks to sleepless nights and grizzly children, which lead to an inability to write anything comprehendible. But today is Thursday, and it’s time t think about what I am cooking tonight. Usually I try to cook something that will also serve as leftovers for Saturday lunch. This weekend however, is full of birthday parties, so Saturday lunch and dinner are taken care of. Woot woot!
Last night, I had a bit of a disaster in the kitchen. Hubby texted me late afternoon to say that he didn’t get time to stop for lunch, he was starving, and what was for dinner? My response was, brown rice arancini balls with roast veg and guacamole (plus we always make a salad). He replied, nice. Great, so I was happy that he wasn’t put off with the idea of dinner, I hadn’t really prepped it yet because I had run out of brown rice, so had to wait for Miss O to wake before I could pop up to the supermarket and grab some. >
