I have been trialling a few different chocolate chip cookie recipes. Some are a more crumbly, some are too sweet, and some are, well, rocks.
I have so much easter egg chocolate still in my cupboards, and I have been trying to find chocolate recipes to use it up. I think, finally, I have done it. These are slightly crispy on the outside, slightly chewy inside. Sweet, but not sickly sweet. They aren’t healthy in any way, they have white caster sugar and brown sugar. Don’t replace it with one or the other, as this combination is what gives them their chewiness.
It’s nearly back to school time, and I have been scouring the internet looking for nutritious snacks and lunch ideas for my kids. Most of the schools in Victoria go back today, which means, back to making school lunches, back to early mornings, back to extra curricular activities. I always feel like school going back creeps up on me, and all of a sudden I’m thinking of what to pack into lunches again. I will be doing some gluten free options in the coming school lunch posts, but this week, I’m doing quick and easy, child pleasing stuff.

Two weeks ago on my facebook page, I promised a grain free (and therefore gluten free), dairy free, nut free and refined sugar free biscuit. Then I hurt my back, and was so low on supplies, I couldn’t even play with the recipe. Today, I finally got to my dry goods supply store, so tonight, while Master B cooked the BBQ, I whipped up the biscuits and am now procrastinating cleaning my kitchen while I type up the recipe for you all.
