It’s Thursday again! Is it just me, or are the weeks flying by?!

Tonight we have friends coming for dinner who eat a paleo diet. Add in no nightshades or goitrogens and I was stumped for a minute. I wish I could say that I came up with something wonderful and complicated, but I didn’t. The best part of the paleo life is that it is supposed to be simple. It’s all about enjoying good, simple food. So tonight I am doing twice cooked roast vegetables (sweet potatoes, beetroot and white potatoes for those who can eat them – mainly the kids), mixed grill of organic chicken, lamb and beef served with a large lovely green salad loaded with fennel and carrots. Things have been quiet on the blog this week, thanks to sleepless nights and grizzly children, which lead to an inability to write anything comprehendible. But today is Thursday, and it’s time t think about what I am cooking tonight. Usually I try to cook something that will also serve as leftovers for Saturday lunch. This weekend however, is full of birthday parties, so Saturday lunch and dinner are taken care of. Woot woot!
Last night, I had a bit of a disaster in the kitchen. Hubby texted me late afternoon to say that he didn’t get time to stop for lunch, he was starving, and what was for dinner? My response was, brown rice arancini balls with roast veg and guacamole (plus we always make a salad). He replied, nice. Great, so I was happy that he wasn’t put off with the idea of dinner, I hadn’t really prepped it yet because I had run out of brown rice, so had to wait for Miss O to wake before I could pop up to the supermarket and grab some. >
I’ve noticed lately that my kids seem to be given a lot of lollies and chocolates at school. They won table points, here’s a lollipop. It’s someone’s birthday, here’s a freddo. Don’t get me wrong, I’m not completely opposed to sugar, I just try to limit how much my kids eat it, and also, make sure that if they are having treats, that they are perhaps home cooked cake or a reasonable quality chocolate. Yesterday my kids had a market day at school, and although I asked them not to buy too much junk food, of course, they loaded up on toffees, smarties, mixed lollies and cakes. I probably would have done the same at their age. >
It’s nearly Friday! I start to get into weekend mode today, start switching off a little bit and thinking about what activities are happening over the weekend. Our weekends start with early Saturday morning sports until about lunch time, where I pull out whatever leftovers are lurking in the fridge, a bit of this, a bit of that and we have a meal. If I haven’t planned my meals properly for Thursday to allow leftovers (for Saturday) I find myself picking up takeaway or stopping past a bakery, which is high in cost and calories but low in nutrition.
