What’s cooking Thursday?

As you know, I like to batch cook on Thursday to allow for leftovers for the weekend. Today I am keeping it simple because I am going to the movies with my sister tonight to see The Great Gatsby, so I don’t want too many dishes and mess at the end of dinner.

Tonight’s dinner will be grilled free range chicken pieces (Maryland not fillets as the bone in always gives it more flavour and is much more budget friendly when batch cooking), seasoned with garlic, lemon and oregano. Served with steamed cauliflower, broccoli and carrots and for the kids, a side of small pasta that will be mixed through the grilled chicken to absorb all the flavour and then a shave of parmesan over the top. Serve with a side of dark leafy green veg and avacado salad and greek yoghurt.
There you have a lovely simple, tasty dinner, which will leave plenty of leftovers for the weekend šŸ™‚

  1. Thank you, I have chicken out & had no idea what to do! Now I do! Batch cook monday – bone broth, meat & chicken parties for lunches or quick kiddy dinners, banana bread, a roast, and tubs of cooked veges for snacks, lunches & quick editions to dinners, esp my store of sweet potato & yams, my good carb friends!
