As you know, I like to batch cook on Thursday to allow for leftovers for the weekend. Today I am keeping it simple because I am going to the movies with my sister tonight to see The Great Gatsby, so I don’t want too many dishes and mess at the end of dinner.
Tonight’s dinner will be grilled free range chicken pieces (Maryland not fillets as the bone in always gives it more flavour and is much more budget friendly when batch cooking), seasoned with garlic, lemon and oregano. Served with steamed cauliflower, broccoli and carrots and for the kids, a side of small pasta that will be mixed through the grilled chicken to absorb all the flavour and then a shave of parmesan over the top. Serve with a side of dark leafy green veg and avacado salad and greek yoghurt.
There you have a lovely simple, tasty dinner, which will leave plenty of leftovers for the weekend 🙂
